Gluten-Free Guide

Kitchen procedures for our new gluten-free menu.

Our Gluten-Free Boneless menu item is prepared in a shared kitchen with our gluten-full signature fried chicken. Gluten is present in the air and unintentional cross contact is possible. We are committed to sharing all of the precautions we’re taking in our kitchens and have outlined our procedures below:

Oil Strategy

Every Monday night at close, we will empty and clean our fryers, eliminating gluten contaminates. Each Tuesday, we will open with fresh oil that will only be used for our Gluten-Free Boneless. Our Gluten-Free Boneless is fried in a separate fryer to order.

Paste

Our cayenne-infused paste is the secret sauce to our hot chicken recipe. Our Gluten-Free Boneless is prepared in a separate paste, but is positioned in close proximity to other gluten-containing menu items.

Equipment

Our Gluten-Free Boneless is prepared in our kitchens with separate equipment, differentiated by color and utilized on Tuesdays only.

Sides

Our Baked Beans + Ma's Slaw are both gluten-free. Both sides are prepared on a shared prep table where cross contact with gluten is possible.
